Ringing the Bull (or whatever) is a ring on a string tied to the ceiling and a hook on a wall. Swing the ring and try to get it to catch onto the hook. Bimini Ring is its name in the Caribbean, named after a district in The Bahamas.
The fellows at sggc 5mississippi have created a tabletop version called Hookum (pictured). The game is advertised as Simple, in that it requires Skill, No Assembly, No Batteries, and No Brain.

The game plays just like the original Settlers of Catan, has multiplayer support, and can be played against bots if no other players are available. More information available at Catan.com.
